3 cups oatmeal
1 cup oat flour
1 tsp. baking soda
¼ tsp. nutmeg
1 cup unsweetened applesauce
½ cup sugar or sugar substitute
1 tsp. vanilla
2/3 cup dried apples
½ cup chopped walnuts
Combine the first four ingredients. Mix up the next three ingredients and add them to the dry ingredients. Stir in the dried fruit and nuts. Roll in small balls and smash to ¼ inch thickness on the cookie sheet. Bake at 275 degrees for 20-25 minutes.
