High-Fiber Muffins

High-Fiber Muffins

Approximately 12 small or 9 larger muffins

1 ¼ cups 100% rolled oats
1 cup oat bran flour
1 large apple, peeled
3/4 cup unsweetened applesauce
1/3 cup unprocessed bran
½ cup chopped walnuts
1 tablespoon vanilla
1 tablespoon cinnamon
1 tablespoon baking powder
1 teaspoon baking soda
½ cup unsweetened vanilla almond milk
¼ cup olive oil or canola oil
¼ cup sugar or substitute
2 eggs or 4 egg whites or ½ cup egg substitutes

Mix all the above ingredients together. Use cooking spray in a 12-muffin tray. Bake at 400 degrees for 15-20 minutes or until brown.
