4 10-ounce packages frozen chopped spinach
Filo leaves (Greek dough leaves)
Pam cooking spray
3 Tbsp. melted butter
1 package Feta cheese
Microwave spinach and drain very, very well. Squeeze out any excess water. Beat egg and add it to spinach. Grate onion and add to mixture. Crumble cheese and add to mixture along with pepper.
Spray bottom and sides of lasagna size pan with Pam cooking spray. Place five filo leaves on the bottom of the pan. Add all of mixture. Add five more leaves on top. (You may have to fold leaves in half. In this case, use five. If you do not double them, use 10 sheets each on top and bottom. Brush melted butter across top of spinach pie (the top layer of filo leaves). Bake at 350 degrees for about 30-45 minutes until slightly brown.
