Vegetable Tempura

Cauliflower florets, zucchini slices, peeled eggplant chunks, thick mushroom slices, thick onion slices
Egg substitute
Panko lemon pepper “bread crumbs”

Place vegetable(s) in a bowl and pour egg substitute to cover the amount of vegetables you use. Spray cooking spray on aluminum foil or cookie sheet. Place egg covered vegetables on foil/sheet and sprinkle panko crumbs over them. Bake at 400 degrees until brown (about 20-30 minutes).
